Winter savory (Satureja montana)
Winter savory is the wild relative of the more common garden savory, an annual cultivated in gardens. Winter savory, by contrast, is a perennial, a small shrub that grows in the Primorska region, especially on the Karst plateau, where it is a characteristic plant of the stony karst heathland. Its scent is somewhat reminiscent of oregano or rosemary, which is unsurprising since it is related to them. Traditionally it has been used as an addition to various meat dishes, minestrones and similar vegetable soups, and in combination with vegetables such as peas, broad beans, beans and mushrooms. It is a strong seasoning and is therefore used only in small quantities, usually in dried form.
